These simple, high-protein egg bites are the perfect option for a simple and healthy breakfast!

Ingredients 

  • 8 eggs
  • 1 cup of cottage cheese
  • ¼ teaspoon of salt
  • ¼ teaspoon of black pepper
  • ¼ teaspoon of garlic powder
  • ¼ teaspoon of onion powder
  • ½ cup of shredded cheese
  • 1 cup of your own mix-ins (ex. Chopped spinach, pepper, mushroom, ham, bacon, etc.)

Substitutions 

To make dairy-free: Substitute cheeses for dairy-free alternatives

Feel free to use any selection of add ins based on preferences and dietary restrictions

 

 

 

Instructions 

  1. Preheat the oven to 350°F and lightly grease a silicone muffin tray. Both oil and nonstick cooking spray work for this
  2. Put eggs, cottage cheese, and spices in a blender and blend until smooth.
  3. Put the blended egg mixture into the silicone muffin tray (pouring about ¼ cup in each hole).
  4. Fill the rest of the pan with cheese and any other ingredients you want to mix in. (spinach, pepper, mushrooms, ham, bacon, etc.) Use the back of a spoon to carefully mix the toppings into the egg cups.
  5. Bake for about 18-22 minutes or until the egg cups are no longer jiggly and the eggs look set. Allow to cool for 3 minutes before removing eggs from the tray.
