Food Labs (all food labs will be in person)
The Kitchen Labs are located at the New Hospitality, Tourism and Culinary Arts School at Progress Campus.
Uniform Policy
Students not in compliance with uniform regulations or hygiene code will not be permitted to attend classes until deficiencies are addressed. The knife kit has to be brought to every class regardless of the scheduled section.
The mandatory uniform for students using the food lab consists of the following:
- Student name tag
- Lab Coat with program name crest
- Long pants to ankle (No nylon or polyester permitted) No leggings, tight pants, yoga pants will be permitted in the kitchen during labs due to risk of burns
- Socks to cover ankle
- Closed-toe and heel shoes with flat heels, and non slip soles (no canvas or mesh)
- French knife, paring knife, vegetable peeler, Thermometer
- Lab manual
- Note pad, pen
- No jewelry, rings or nail polish
- All hair must be covered and beard nets if applicable
- Adhere to scent free environment; no cologne, perfume, body odour
GENERAL SANITATION
- Proper hand washing technique is required. Wash hands frequently especially upon entering or returning to the lab and after handling raw meats, seafood or strong foods such as garlic.
- A clean pressed uniform is mandatory
- Wash your knives at the beginning of the lab and after cutting raw meats seafood and strong foods such as garlic
- Street clothes and school bags must be stored in the change room or lockers. We strongly recommend you lock all your belongings in a locker. Students must bring their own pad lock and are required to empty the locker at the end of each class.
Kitchen Lab– ATTENDANCE
This is a hands on course in which classroom activities are evaluated. Therefore you must be present to be graded. Attendance is mandatory for continuous lab skills evaluations.
Your are expected to be changed into your complete uniform at the start of the lesson. Your uniform must be clean and ironed. Your personal knife set tools and manuals must be brought to every class regardless of the section which you are scheduled.
If you are unable to attend, you must inform your instructor prior to the start of the class.
You will not be permitted to participate for lab class if you are late more than 15 minutes for and will be graded accordingly.
Any student absent for more than 2 classes during the 14 week semester will be marked/evaluated as incomplete or unsatisfactory and will be graded accordingly for continuous lab skills.
Students with incomplete or dirty uniforms will not be permitted to attend the lesson and are asked to return with complete or clean uniforms and will be graded accordingly.

- 8GB or more of RAM
- 256GB HD
- Windows 10 operating system
- Recommended:
- Built-in webcam (or USB webcam) and headset
- Built-in Ethernet port
- Audio/mic combo
- A solid-state drive (SSD)
- A laptop with a battery life of 3 hours or better
You will need regular access to a computer with an internet connection. High speed broadband access (LAN, Cable or DSL) with minimum 10mbps download speed is highly recommended. Some courses have more advanced system requirements.
Software
Students have access to industry-leading software packages and bundles that can be found in rooms, labs, and podiums across our campuses. Computers at each campus will be loaded with the applications for use in your courses. To access these features, you must log in to the network using your student number. Digital Resources
All learning resources will be discussed during the first week of the semester. Students may be required to purchase e-textbooks or digital platforms as course requirements.
Library Collections
Instructors may make course readings available online through the eReserves service in eCentennial or as physical items that can be borrowed from a campus library on short-term loan. If your instructor is using eReserves, you will see a module in the course content on eCentennial. The list may include links to library resources like databases, articles, and eBooks; book chapters; web links; and open educational resources. Check your course outline or contact your instructor for information about where your assigned course readings are located.
