This textbook is an introduction to the tourism and hospitality industry in British Columbia,  and is written with a first year college and university audience in mind. It is a collaborative work with input from educators, industry leaders, employers, and past graduates of BC’s tourism and hospitality management programs. All chapters have been reviewed by experts in the field.

Each chapter is organized thematically moving from a global, then national and finally provincial context. Some chapters are quite global in focus while others concentrate primarily on British Columbia. Chapter content is based on available data and research, and input from collaborators.

Each chapter features “Spotlight On” text boxes that highlight an organization, business, or other key component of the chapter’s theme. “Take a Closer Look” features encourage students to do further reading on particular subjects.

At the end of each chapter, key terms are presented in alphabetical order to help students gain confidence with terminology. These are followed by chapter exercises and a case study for in-depth exploration of the subject matter. Key terms are summarized in a Glossary at the end of the textbook.

This textbook is intended to provide the core elements of a curriculum for teaching environmental science at the introductory level in Canadian colleges and universities. This book is suitable for students beginning a program in environmental science, environmental studies, or sustainability. It is also appropriate for arts students who require a science elective, and for science students who require a non-major elective. Not many introductory textbooks in environmental science are written in a way that provides a deep examination of issues that are particularly important in Canada, and the ways they are being dealt with by governments and society-at-large. Canada has unique national and regional perspectives that should be understood by Canadian students, and it is regrettable that many of them are studying from textbooks whose focus is not their own country.

This book, however, was written from the ground-up to provide Canadian information and examples. This national context is integrated throughout the text, along with North American and global data that provide a broader perspective. Special Canadian Focus boxes illustrate important examples of environmental issues in our national context. At the same time, Global Focus boxes enhance the international context for learning about issues, while In Detail boxes examine particular topics in greater depth.

This course pack is designed to meet the learning outcomes for Adult Literacy Fundamental English Level 2 (roughly equivalent to grades 1.5 to 3 in the K-12 system). Every of the eight chapters includes a level-appropriate, high-interest reading of approximately 200 words.

The readings are freely available in a separate reader with convenient links to the readings in each chapter of this course pack. The online version of this course pack also contains audio recordings of each story in the reader. These recordings, combined with vocabulary and word pattern exercises, prepare the Level 2 student to read each chapter with greater independence. Depending on a learner’s readiness, you may wish to use the sentences in the Word Pattern sections as dictation. It is recommended that these books are used alongside a structured phonics program, such as the Wilson Reading System.

Each course pack chapter includes pre-reading questions that can be used for individual reflection or class discussion, vocabulary-building and word pattern exercises, comprehension questions, grammar lessons and practice exercises, and a writing task. Font size and line spacing can be adjusted in the online view, and have been enhanced for the print and PDF versions for easier reading. This course pack has been reviewed by subject experts from colleges and universities.

Exploring Movie Construction & Production contains eight chapters of the major areas of film construction and production. The discussion covers theme, genre, narrative structure, character portrayal, story, plot, directing style, cinematography, and editing. Important terminology is defined and types of analysis are discussed and demonstrated. An extended example of how a movie description reflects the setting, narrative structure, or directing style is used throughout the book to illustrate building blocks of each theme. This approach to film instruction and analysis has proved beneficial to increasing students’ learning, while enhancing the creativity and critical thinking of the student.

This textbook introduces aspects of the history of Canada since Confederation. “Canada” in this context includes Newfoundland and all the other parts that come to be aggregated into the Dominion after 1867. Much of this text follows thematic lines. Each chapter moves chronologically but with alternative narratives in mind. What Aboriginal accounts must we place in the foreground? Which structures (economic or social) determine the range of choices available to human agents of history? What environmental questions need to be raised to gain a more complete understanding of choices made in the past and their ramifications?

Each chapter is comprised of several sections and some of those are further divided. In many instances you will encounter original material that has been contributed by other university historians from across Canada who are leaders in their respective fields. They provide a diversity of voices on the subject of the nation’s history and, thus, an opportunity to experience some of the complexities of understanding and approaching the past. Canadian History: Post-Confederation includes Learning Objectives and Key Points in most chapter sections, intended to help identify issues of over-arching importance. Recent interviews with historians from across Canada have been captured in video clips that are embedded throughout the web version of the book. At the end of each chapter, the Summary section includes additional features: Key Terms, Short Answer Exercises, and Suggested Readings. The key terms are bolded in the text, and collected in a Glossary in the appendix.

Although created with the Professional Cook, Baker and Meatcutter programs in mind, these have been designed as a modular series, and therefore can be used to support a wide variety of programs that offer training in foodservice skills.

This book is intended to give students a basic understanding of the various types of meat and poultry used in the food service industry, and how the terminology used by retail, wholesale, and food service customers varies. Meat cutting for restaurants and hotels differs slightly from meat cutting for retail. Restaurants and hotels sometimes use names of cuts on menus that are common in the kitchen vernacular or in other jurisdictions like Europe or the United States, while retail meat cutters are bound by Canadian regulations regarding labelling and marketing of meat products to consumers for retail.
