Program Learning Resources and Facilities

Attendance

Participants are expected to attend all labs. If this is not possible for some reason, then it is the student’s responsibility to contact the instructor, leave a message on the voice mail, or send an email before the scheduled lab. A positive and professional attitude and conduct are to be always maintained. Online make-up assessments can be arranged upon requests for any missing lab up to three. Any student missing more than three labs (or 20% or more, of course, learning objectives) without completing make-up assessments may not be eligible for a passing grade.

For the online courses, attendance to weekly virtual check-in session is not mandatory. Attending the weekly virtual check-in session is highly recommended as it is a great way to communicate with professor and peers, however, students will NOT be evaluated based on their attendance.

Attire and Equipment

Students to participate in the lab must report to their lab in standard approved Centennial uniform. (Uniforms, knives and smallwares to be obtained by the first two weeks of scheduled lab classes).

Cell Phone Policy During Labs

The use of cell phones and iPads during lab hours is permitted to access learning course materials. The college “BringIt” program’s policies and procedures must be followed. (Please see college policies and procedures for the BringIt program). If a student requires the use of a cell phone other than for accessing learning materials, they must ask the instructor’s permission to leave the lab or lecture room. The student must leave the unattended workspace in a safe and orderly manner. It is the student’s responsibility to safeguard any items left in or on the stove during that time. Please have cell phones on vibrate and preferably use only during official breaks. Students are encouraged to leave cell phones and other electronic devices secured in locked lockers in the change room when not used for safety purposes.

Alcohol Service/Sampling

Where service, sampling or use of alcohol is included as part of the curriculum, the following policies must be followed.

  • If students are required to serve or evaluate alcohol in a dining atmosphere, their alcohol consumption is strictly prohibited.
  • Students can sample alcohol directly related to the learning outcomes and ONLY under an instructor’s direct supervision.
  • If students use alcohol in culinary cooking, consuming alcohol directly is strictly prohibited in course learning outcomes, policies and procedures.
  • Failure to adhere to the College’s policy on alcohol will result in penalties, up to and including expulsion.

 

Lab Material Requirements

Dress code and equipment requirements for the practical lab are as follows:

Uniform Requirements

The student will dress in the required uniform consisting of Centennial College standard issued uniform:

  • Clean pressed starched Centennial Chef’s jacket
  • Clean Centennial chef’s black trousers (hemmed, no roll-ups)
  • Clean Centennial apron
  • Clean Centennial cook’s hat
  • Appropriate footwear – ALL BLACK leather uppers, non-slip soles (no running shoes). Certified Safety Shoes
  • Side towel (2) for handling hot items
  • Cloths (2) for cleaning and washing of equipment and workstation

The student will arrive at class with the required course learning materials or the required recipes for the class. The student will be responsible for his or her writing utensils. It is the student’s responsibility to take proper notes regarding techniques and theory regarding the demonstration.

Appearance

  • Students are expected to come into class with clean pressed uniforms
  • Cell phones are set to VIBRATE, and all listening devices are turned OFF during scheduled class time. Please gain prior consent from faculty to record demonstrations or live discussions in the classroom.
  • No exposed piercing or jewelry.
  • Hair neatly trimmed and tucked under chef’s hat; if necessary, a hairnet shall be worn underneath the cook’s hat.
  • Fingernails are trimmed and clean, with no nail polish.
  • The student will bring the appropriate recipes and notes to class
  • Centennial College approved a complete uniform knife kit, tools and small wares, including two tasting spoons.

The use of perfume and aftershave is NOT permitted, as Centennial College is a “fragrance-free” environment. *The above requirements will be strictly enforced in order to participate in class.

Students not adhering to the dress code will not be permitted into the class.

Software

Students have access to industry-leading software packages and bundles that can be found in rooms, labs, and podiums across our campuses. Computers at each campus will be loaded with the applications for use in your courses. To access these features, you must log in to the network using your student number. Library Collections

We have an online format and many resources and services, as well as all Library and Learning Centre staff, are available to you.

Our learning and math strategists, library staff, peer tutors, and success advisors have got you covered! You have access to a wide and comprehensive library collection of digital books, journals, movies and academic databases, as well as online learning tips, tools and motivational (and informative) videos. Our online appointment booking system makes it easy and convenient for you to get individualized, one-on-one support.

Instructors may make course readings available online through the eReserves service in eCentennial or as physical items that can be borrowed from a campus library on short-term loan. If your instructor is using eReserves, you will see a module in the course content on eCentennial. The list may include links to library resources like databases, articles, and eBooks; book chapters; web links; and open educational resources. Check your course outline or contact your instructor for information about where your assigned course readings are located.
